Recipe: Crab and Brie Soup

After my kilo of brie purchase I wanted to find some creative ways to try eating brie. We're coming up to winter and I thought soup sounded great so here's the recipe! It was absolutely spectacular and I will make it again and again. And, as an added bonus, when you tell someone over the phone that you're eating soup with crab and brie you will only hear moans and begs for the rest of the conversation. Crab and Brie Soup
Ingredients:
1/2 large white onions, chopped
3 stalks celery, chopped
4 oz unsalted butter
3 oz flour
2 pt seafood stock
1 pt heavy whipping cream
1/2 lb crab meat, chopped fine
1/2 lb brie cheese, rind removed and cut into chunks
Cajun seasoning, to taste
Worcestershire sauce
3 oz green onions, chopped

Recipe:
Sauté the chopped white onions and celery in the unsalted butter for ten minutes. Add flour slowly to avoid lumps, mix well. Add seafood stock and bring to a boil for ten minutes. To this, add the cream to your liking, crab meat and brie cheese. Simmer for another ten minutes. Season with cajun seasoning and Worchestershire sauce to taste. Garnish with green onions. Soup will be slightly spicy hot.

Note: I couldn't find seafood stock so I created my own by using 32 oz. vegetable stock, 8 oz. clam juice, and one shrimp bouillon cube. I simmered the three ingredients for about 10 minutes and it smelled and tasted like a hearty seafood stock.
